CHICKEN EMPANADA

Serves 3-5

Empanada is a Spanish dish consisting of a pastry and a filling. It can be baked of fried.

INGREDIENTS;

 

For Pastry;

Flour(All Purpose) - 3 cups

Baking Powder - 1tbsp

Sugar - 2 tsp

Salt - To taste

Butter/Margarine - 1⁄2 cup

Egg - 1 no

Chicken Stock - 3/4th cup

For Filling;

Olive Oil - 2 tbsp

Ground Chicken - 500 g

Salt - to taste

Garlic - 1 tbsp

Tomato Paste - 2 tbsp

Vinegar - 2 tbsp

Black Pepper Powder - 2 tsp

Cayenne Pepper - 1 tsp

Dried Oregano - 1 tsp

Garlic Clove - 5 no

Green Bell Pepper - 1 no

Red Bell Pepper - 1 no

Red Onion - 1 no

METHOD;

 

For the Empanada Dough:

Combine the flour, baking powder, sugar and salt in a large bowl. Mix in the butter/margarine in a pastry blender or using hand.

In a separate bowl, beat the egg and then whisk in the stock. Add the egg mixture to the flour mixture and knead until a dough forms.

Cover and refrigerate for 30 minutes.

Empanada Filling:

In a large nonstick skillet/pan, heat olive oil over medium heat. Add the garlic and onion cook until the onion is translucent. Then add in the bell peppers, and cook for 2-3 minutes. Add in the tomato paste, vinegar, salt, cayenne pepper, black pepper powder, oregano and cook.In another pan, add the remaining olive oil and add the ground chicken. Cook till chicken is half cooked. Then add in the cooked vegetable mixture to the chicken and cook till the chicken is cooked completely. The mixture should be moist but not dripping wet.

  

Assembly of Empanadas:

Lightly flour a work surface and roll out the dough to 1/4 inch thick. Cut out 4, 5 or 6 inch rounds. Add some meat filling to each empanada and fold the dough over in half to enclose the filling. Use a fork to press and seal the edges closed. You can refrigerate the uncooked empanadas as per usage or fry/bake them after 10-15 min of refrigeration. To fry, heat the oil in a deep fryer to 350 degrees F. Fry the empanadas until golden brown, or bake for 15-20 min at 190 degree C and 5 min at 230 degree C minutes or till golden brown. Bake the empanadas more in case if frozen completely.
