CURRY LEAF PESTO

INGREDIENTS;

 

Curry leaves - 2o g

Coriander leaves - 5 g

Cashews - 3 no.

Garlic - 4-5 cloves

Salt - to taste

Olive oil - 2 tbsp 

Parmesan cheese - 5 g

Herb of your choice - 1 sprig

 

METHOD;

 

In a pan add olive oil and garlic. Let it heat. Cook for 1-2 minutes.

Then add curry leaves and switch of the flame. Add your favorite herb, coriander leaves, and salt.

Add cashews and parmesan and  crush using a pestle till it becomes like a paste or chutney. Use it as a dip or spread and enjoy.
